I was lucky enough to be down in LA for my friend Van’s birthday last month. She treated me and a few friends to a delicious, home-cooked meal and then we made these killer sushi cupcakes for dessert. (She got the idea from NotMartha.org.)
These were actually really simple to make. You just need yellow cake cupcakes, white frosting, sprinkles, Swedish fish, and fruit roll-ups.
My favorite are the little Swedish fish sashimi. … but using red sprinkles for the roe is pretty clever too.
